Easy Red Shrimp Curry
Today on the blog, I have a Easy Red Shrimp Curry recipe that I promise that anyone can make and it's so yummy! This was a recipe that my friend Kathy shared with me and it's been one I have remade so many times now plus it makes quite a bit and the leftovers are the best part!
EASY RED SHRIMP CURRY
You will need:
2 cups coconut milk
1 tablespoon of red curry paste
1/2 pound of shrimp, peeled and deveined
1 cup water ( less if you want a thicker curry )
2 cups canned bamboo shoot strips, drained
2 tablespoons of sugar
1 teaspoon paprika
2 tablespoon plus 2 teaspoon of fish sauce
1/4 teaspoon salt or to taste
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1 diced potato (optional) . You could easily use a sweet potato as well.
Steamed rice
In a large pot, bring half the coconut milk to a slow boil, stirring constantly. Add the curry paste. I add a little more if I want more color. Add shrimp and cook until done.
Add the remaining coconut milk, water, bamboo shoots, sugar, paprika and fish sauce bad bring to a boil slowly. Add salt to taste. You can also add chicken or any other protein of your choice. I sometimes add chicken as well. Add bell peppers and cook for an additional few minutes and remove from heat. Serve over steamed rice.
