Easy Chicken Veggie Wraps

Happy Monday friends! Whew, it’s been a hot minute since I lasted posted but I am definitely feeling better and getting back into the groove of things and I am so excited to share this easy lunch idea that was inspired by my sweet friend Johanna! If you don’t have a Johanna in your life, you definitely need one! She is one of my closest friends and I just adore her and when Johanna says she is bringing over lunch, you know that it’s going to be healthy for you, homemade and packed full of love because that is just her and I am so grateful! Since my surgery, I am being a little selective on what I am eating as my incision is still healing and these Chicken Veggie Wraps are just perfect for a quick yet filling lunch.

There is no wrong or right way to make them but I just followed how Johanna made them for me which just a slight tweaking depending on what I had on hand. So basically, take what you like to eat and fill it up!

Easy Chicken Veggie Wrap

Romaine Heart Leaves

Any type of protein - I used chicken breast

Chopped Green Onions

Matchstick Radishs

Matchstick Cucumbers

Shredded carrots

Avocado

Optional: Cheese, Hummus, Pesto or really any type of sauce. I like using a Jalapeno Ranch to add a little kick.

Once you have all your veggies and toppings prep, all you have to do is add it on your Romaine Heart Leaves and enjoy! Like I said, there is really no wrong way to put them together and I promise you will love it! It’s delicious and a healthy lunch option. I also added a side of hummus to dip my veggies in or you could also serve it with a few pita crackers.
